These cupcakes are a perfect simple weekday treat, but before we go on I have to admit something to you – I am not the neatest baker and I like the messy homemade look – the more decorations the better for me! Whether you are the next star baker or just starting on your baking career these cupcakes are a great start!
2 free range eggs
½ tsp Vanilla Extract
125g White Spelt Flour
2 tsp Baking Powder
125 Coconut Palm Sugar
125g Coconut Oil
Preheat the oven to 180°c and fill a 12 hole tray with paper cases.
Fully combine the coconut oil and coconut palm sugar with either an electric hand held whisk or wooden spoon, then beat in each of the eggs a little at a time.
Next add the vanilla extract and fold in both the flour and the baking powder (sieved) until the mixture is combined. Then fill the paper cases with the mixture about half way and pop into the oven for 12-15 minutes.
When these cupcakes turn a golden colour and have risen they are ready - to check this pop a little skewer into the centre off the cupcake and it should come out clean.
Leave the cupcakes to cool before decorating with your favourite toppings. These cupcakes are delicious on their own or if you fancy something a bit sweeter on top why not make some frosting or mix it up with some fresh cut fruit and cream!
